One button, and it does two things at once.
Mark as shipped
It stamps the order as dispatched, moves it to the Shipped tab, and emails the customer a dispatch note. So press it when the parcel actually leaves, not when you start packing — the customer reads that email as "it's on its way".
The email is sent once. If two of you press the button at the same moment, or you press it twice, only one dispatch note goes out. You can't accidentally tell a customer twice.
When the button isn't there

There's no tracking number box
If you have a tracking number the dispatch email will carry it, but this page doesn't ask you for one — so for now dispatch means "gone", not "gone, here's where it is".
